super simple banana bread


My mom has made delicious banana bread for years. It’s always so moist and perfect, I can never have just one slice. I’m not sure why it took me so long to give baking it a shot, but I finally did! This will more than likely become a common occurrence seeing as I am often overzealous with the purchasing of bananas…. Afterwards I called my mom to brag, and she gave me some ideas of other ingredients to add, which I will share further down.

I never thought I’d become the kind of person that had all ingredients already on hand…but that’s why this recipe is super simple. I didn’t have to go out and buy a single thing! SWEET!

Ingredients:   3-4 ripe bananas, smashed [I used 4] // 1/3 cup melted butter // 1 cup of sugar //
1 egg, beaten // 1 tsp vanilla // 1 tsp baking soda // pinch of salt // 1.5 cups of flour

Peeling over-ripe bananas…is kinda gross.

Directions: Preheat the oven to 350. // Mash the bananas. // Beat the egg. // Mix the butter and bananas. //
Add/mix sugar, egg, and vanilla. // Sprinkle baking soda and salt and mix. // Add the flour and mix. //
[[**I also added a couple handfuls of chopped up pecans and a pinch of cinnamon.** Next time I want to add raisins and chocolate chips!]]

Pour this mixture into a loaf pan, preferably 4×8 [I didn’t have one this size…so my  bread came out lookin’ like moist biscotti].
Bake time for the greased 4×8 pan is 1 hour. [[Bake time for my super wide pan was 35 minutes.]]

Once the knife comes out clean, remove from pan, add some butter or peanutbutter and gobble it up! Because mine came out so wide and thin, I’m going to dip it into my coffee. Yum!!

This may be a simple and played out recipe, but like I said, I never tried it! And definitely didn’t realize how easy it is. So if you’ve got some bananas that are going bad, consider mashing them up and baking your own loaf. 🙂

  1. Looks amazing! I think I might use this for my first bake in my new oven:) Now that I'm living by myself I find it hard to use up all the bananas I buy, so this is perfect!
